Simple Turkey Ham and Beans THM E Meal Under 15 Minutes

June 29, 2018 by Stacy Craft 5 Comments

A simple THM E turkey ham and beans skillet meal that is made in under 15 minutes. Perfect for busy work week meals.

THM E Beans and Turkey Ham Lunch or LIght dinner

Why are E meals hard? They don’t have to be, but you need a good list of easy, “go to” E meals. This ham and beans THM E meal uses lean turkey ham to stay within the fat limit of an E Meal and you can put it together in less than 15 minutes.

Another easy E meal to add to your list is this No Sugar Added Baked Georgia Peach Oatmeal.

We often eat these beansfor an easy lunch or a light dinner. I love it because not only is it quick, it is also cheap.

The turkey ham will last us multiple meals and the beans are usually less than .60 a can. So for less than $2-$3 (depending on how much ham you use), I can feed 2 adults and a child lunch. Now try to tell me Trim Healthy Mama costs too much! I love finding ways to eat healthy and cheap!

Ham and Beans THM E Meal

If you are from the South, a big pot of beans with a huge ham hock simmering all day is something you probably grew up watching your mama or grandmama stirring on Sunday. It is simple comfort food.

I took that memory and modified it a little to meet the THM E meal guidelines. Now I can have (turkey) ham and beans in a healthy carb setting without all the added fat.

Since the turkey ham is already cooked, you are really just warming up your ingredients. Quick and easy.

Dice the ham and turn your burner to medium/low. Spray the pan with non-stick spray and add your ham. In a separate pot, add your beans on medium/low to simmer.

Uncooked Turkey Ham

Cook the turkey ham until you get the pieces browned.

Browned Turkey Ham

Transfer the turkey ham into the pot with your beans. Add in the seasoning and cook for about 5 more minutes to allow the flavors to merry together. The seasonings just amp up the flavor of this simple ham and beans THM E Meal.

Ham & Beans THM E Meal Simmering

Serve that easy ham and beans THM E meal up to your family. My 4 year old & 8 month old both eat this with no complaints. Winner Winner ham and beans THM E meal dinner!

Turkey Ham and Northern Beans Simple THM E Meal Under 15 Minutes
Course Main Dish
Cook Time 10 minutes
Servings
Ingredients
  • 1 can White Northern Beans
  • 4 oz Lean Turkey Ham
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp parsley
  • salt/pepper To Taste
Course Main Dish
Cook Time 10 minutes
Servings
Ingredients
  • 1 can White Northern Beans
  • 4 oz Lean Turkey Ham
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp parsley
  • salt/pepper To Taste
Instructions
  1. Dice the turkey ham into the desired bite size pieces. Open can of beans and place them into a pot to simmer on medium/low (do not drain). Spray a second skillet and add diced ham. Brown the turkey ham on medium low. This step isn't necessary but it adds a nice flavor to the dish. Add the browned turkey ham to the beans. Add in seasonings and simmer for 5 minutes or so to meld the flavors.

The only thing that would make this better is a big chunk of crusty cornbread. I may just have to try a Trim Healthy Mama cornbread soon. Did you grow up eating ham and beans?

6 Trim Healthy Mama Lunches For Work

April 14, 2018 by Stacy Craft 8 Comments

These 6 Trim Healthy Mama lunches will make your work week so much easier and keep you on plan.

6 low prep THM Lunch Ideas

The Trim Healthy Mama plan works for weight loss but it can seem overwhelming at first.

The biggest complaints that I see on the Facebook groups regarding the plan is the large time and cooking commitment and that it costs too much. With proper planning, both of those can be easily overcome.

Here you will find six Trim Healthy Mama lunches that you can take to work that require little prep work and are fairly economical.

The other complaint that I hear is that it is hard to know which type of meal (S or E) that you are consuming.

Each of these meals will be labelled so that you can easily determine the fuel of the Trim Healthy Mama lunch that you are consuming. And if you want an extra THM S idea, read about my favorite protein packed salad here.

Meal Prep Tip

I don’t like participating in the Sunday meal prep game. My Sundays are for church, family, rest and Pinterest (in that order). If it works for you great but if it doesn’t, here is what I do. I just cook extra of whatever meat that I make for dinner and then incorporate that extra into lunches during the week.

For example, I will have my husband grill a couple of extra chicken breasts which takes no extra time. I also brown my ground beef as soon as I buy it and then freeze it. Doing this makes a lunch with ground beef a cinch to pull together.

6 Trim Healthy Mama Lunches

I am trying to shed some of my leftover baby weight so I am currently sticking with one E meal or snack a day and the rest of my meals fall into the S category. If you are closer to goal weight, you may want to add in extra E meals or even some crossovers.

(That is what works for me. Some people find that more E meals aid in their weight loss. You may have to play around with it to see what works best for you)

Grilled Chicken Salad – THM S

Salad included baby spinach and shredded cabbage, grilled chicken (leftover), boiled egg, shredded cheese, 1/2 an avocado, mini bell peppers and ranch dressing.

Another of my salad favorites is the Mama’s salad. It is awesome because the protein requires no pre-cooking and you can read about it here.

Grilled Chicken Salad THM S

Sprouted Ham Sandwich – THM E

Most of my Trim Healthy Mama lunches this week were in the S category. I do try to have at least one E meal or snack a day.

I find incorporating at least some carbs daily prevent me from getting that “Keto Flu” feeling.

This E meal included a sandwich made on sprouted bread (my favorite is from Aldi) with lean ham, laughing cow cheese spread and baby spinach.

As a side, I had baked blue corn tortilla chips with salsa and a small serving of blackberries.
*Edited to Add: these chips have become almost impossible to find. In order for the blue chips to be on plan, they must be the baked variety.
No worries, the Baked Tostitos are great and also on plan!

Cheeseburger Salad – THM S

The cheeseburger salad was my favorite lunch all week.

My husband grilled the burgers for this on Saturday but if you had this during the week, you could easily make an extra to warm up during the week for this salad. I’ve also used my air fryer and a frozen burger patty to make this super quick and easy.

I put diced tomatoes, chopped dill pickles, red onion and ranch on this salad. It cured the itch for a burger on a (gasp) bun.

Cheeseburger Salad THM S

Tuna Salad Stuffed Avocado – THM S

Simply make an easy tuna salad and stuff it in your avocado.

My tuna salad had dill pickles, a little greek yogurt and a little mayo, and boiled eggs (from Easter, hence the blue dye!).

I thought the taste of this was really good but I did add a few pork rinds with this meal to provide a little crunch.

Tuna Salad Stuffed Avocado THM S

Loaded Pepper Nachos – THM S

I had seen many recipes for this type of lunch floating around the internet and it honestly just never appealed to me.

But one day I had mini peppers and leftover taco meat in my fridge so I gave it a chance. I was really pleasantly surprised at how much I enjoyed it.

Slice your peppers and roast for a few minutes in the oven, top with your warm taco meat and cheese. Cook for just a few minutes to melt the cheese. Then top with avocado, sour cream and salsa. Yum.

You could probably prep this (roast your peppers) and then just warm it up in the microwave if you needed to take it to work.

Loaded Pepper Nachos THM S

Pickle Cream Cheese Roll Ups – THM S

I eat this at least once every couple of weeks. I love how simple it is to put together.

Simply spread some cream cheese on a piece of deli ham and wrap a dill pickle in it. Super easy and delicious.

I served it with a side of strawberries and pepperoni chips. If you have never tried pepperoni chips, you are missing out.

Just put the pepperoni slices between two paper towels and microwave for a minute or less until they are crunchy. I like to dip them in wing sauce or ranch.

Pickle Cream Cheese roll ups THM S

I hope these 6 Trim Healthy Mama Lunches help to show you that you don’t have to spend hours in the kitchen or tons of money on special ingredients to stay on plan. With a little bit of planning, you can eat great all week.

If you are struggling with understanding the plan, I do highly recommend that you read the book. It will really help you to get a grasp of the way that they recommend that you separate fuels in order to maximize your weight loss.

Have you lost weight on THM? I am down 12 lbs in 4 weeks so far!

No Sugar Added Baked Georgia Peach Oatmeal

June 5, 2018 by Stacy Craft 4 Comments

My daughter is currently obsessed with “dinosaur oatmeal.” The package boasts little dino eggs that “hatch” once you add the hot water to the packet. While I don’t mind her eating this on occasion, I love it when she eats something a little more wholesome. I tried this no sugar added baked Georgia peach oatmeal on her the other day. The Verdict: She loved it! Ate the entire bowl with no complaints.

And since I am following Trim Healthy Mama, I am always looking for good and easy E meals. The firm, bar-like texture provides a tasty breakfast that I can make on Sunday and warm up all week. Not only is it an easy “E” meal, it is also cheap! More on that in a bit! (And if you have no clue what Trim Healthy Mama is, you can read about how it helped me lose 22 lbs postpartum here).

Inexpensive Meal Option

I think everyone knows that oatmeal is cheap. But when you just eat a bowl of mushy oatmeal, it kind of tastes cheap too. I mean, besides my daughter and her happy hatching oatmeal, who else gets excited about oatmeal? Well I do when it is baked! It completely changes the game and texture. I can get excited about it when it is good & cheap.

.60 Bananas

.34 Organic Applesauce

1.25 Oats

.08 Almond milk

1.38 Peaches

$3.65 makes the whole pan of No Sugar Added Baked Georgia Peach Oatmeal

$5.19 – that is the cost of one breakfast meal at my favorite fast food chain

One will feed my whole family and is full of good grains and fruit. The other is full of who knows what kind of preservatives and fat. It also would cost more than $20 to feed a family of four breakfast!

No Sugar Added Baked Georgia Peach Oatmeal

Finding sugar free recipes can be really difficult. I was thrilled to find a baked oatmeal recipe on Sugarplum’s Kitchen that had zero added sugar. I made just a few minor changes to make it Trim Healthy Mama compliant.

Ya’ll I have made this twice in one week. It is good. It is an “E” meal and we all know “E” meals are a little more difficult to come up with so I love that I can prep once and eat on it all week.

Peel 3 Ripe Bananas

The riper the better. Since this recipe is sugar free, you are relying on the natural sweetness of the fruit.

Bananas in a Blue Bowl

Mash the Bananas

Use a fork and smash the bananas until there are no large chunks left. It will still be lumpy.

Mashed bananas

Add Ingredients & Mix

Add the remaining ingredients except for the peaches and mix until well incorporated.

Oatmeal Mixture

Place in Baking Dish

Spread your oatmeal mixture into the prepared baking dish.

Baked oatmeal in dish pre baking

Add Sliced Peaches

Slice your juicy Georgia peaches up into thin slices and place them on top of your oatmeal.

Baked Oatmeal topped with Peaches Pre Bake

Bake

Bake the no sugar added baked Georgia peach oatmeal for 25-30 minutes in a 9×9 pan. Mine was perfectly golden brown and set at about 28 minutes. You can cook it in a 9×13 pan for 20 minutes to yield a thinner product. I prefer the thicker squares that you get in the 9×9 pan.

Baked Oatmeal topped with Peaches Baked

Cool and Slice

Allow the baked oatmeal to cool for 5 minutes. Slice into squares and serve. I like to add a dallop of plain greek yogurt to mine for some added protein. My daughter likes hers with a splash of milk.

The end result is a mildly sweet oatmeal that will leave you full and satisfied. Healthy carbs combined with low fat make this a nice Trim Healthy Mama “E” option.

Thanksgiving Turkey Breakfast Bagel

November 8, 2018 by Stacy Craft 15 Comments

A light and healthy breakfast is just what your kids need leading up to Thanksgiving day. This Thanksgiving turkey breakfast bagel is a cute and tasty treat.

Thanksgiving Breakfast Bagel For Kids. Fun breakfast food ideas for kids to make holidays exciting! Cute Turkey shaped breakfast food idea for young kids.

I have one kiddo that doesn’t like to eat. Like ever. My most popular phrase at home is “eat your food.” But if you make her food cute, she all of the sudden shows more interest. These Thanksgiving turkey breakfast bagel treats had her smiling at the breakfast table this week.

Thanksgiving Turkey Breakfast Bagel for Kids

Holiday inspired treats are one thing that I always planned in my head for my kids, before I had kids. I wanted to do fun food and paper plate painting crafts. Handprint keepsakes and cutout cookies with homemade icing and lots of sprinkles.

One thing that I didn’t anticipate pre-motherhood is just how busy and tired I would be in actual motherhood. So in reality my holiday treats usually consist of things that I typically have at home and that I can make super quick.

A Thanksgiving turkey breakfast bagel puts a healthy and fun treat on your table for the kids. You will be giving your kids a fruit, carb source, and dairy in this meal. It is light enough to eat on Thanksgiving morning during the parades on TV but will also keep them full until lunch at school if you make it earlier in the month.

What Do I Need:

Mini Bagels

Cream Cheese (I used a Honey Flavored)

Candy Eyeballs (If you don’t have these, try chocolate chips or raisins)

Candy Corn

Red & Green Apple

Assembling the Thanksgiving Turkey Breakfast Bagel

Fun food, fast. That is what we are after here! To make this cute Thanksgiving turkey breakfast bagel, start by slicing and toasting the bagel.

Let it cool slightly so that the cream cheese doesn’t slide off the turkey’s body. Once it has cooled a bit, spread the cream cheese on one of the bagels. I spread it on just thick enough to cover up the whole in the middle.

Slice the apples.

Now all you need to do is arrange. Place the apple slices around the edge of your turkey peel side up to show those pretty red and green colors off. Finally, add the eyeball, candy corn nose and trim just a teensy piece of a red apple to make the gobbler. Did you know the “gobbler” is actually called a snood? Weird but true according to this article with 10 things you didn’t (need to) know about turkeys.

Thanksgiving Breakfast bagel idea for kids

My daughter’s only complaint was that the Thanksgiving turkey breakfast bagel needed two eyes and not one. I was going for a profile look. And if I know her like I think I do, she was going for two candy eyeballs. I hope you have fun serving these turkey’s up to your kids.

Put your mini bagel or regular bagel in the toaster and toast. Once they come out of the toaster, let them cool off a bit so that your warm bagel doesn’t melt your cream cheese.

Spread cream cheese around the bagel leaving the middle hole open. I used a honey flavored cream cheese but you could also use plain (or whatever your kids like).

Add two chocolate chips to the bagel for eyes. Serve up the spooky Halloween breakfast bagel to your kids for a fun and healthy treat.
