To start out the A to Z challenge, we are of course starting with letter “A”. When I was thinking about what word to focus on for “A,” three things immediately came to mind. Amazon, Aldi and Accountability. So there may be a post later on about THM things to buy from Amazon or Aldi but for today accountability won out. 

Trying to start a healthier lifestyle is hard. But it certainly isn’t impossible. With a great support system and some tools to help you keep your focus, you will be on your way to losing weight and kicking your sugar habit. These accountability methods for success on THM will get you interacting with other Trim Healthy moms on social media and help you stay motivated to stick to the plan.

Accountability Methods for Success on THM

Thanks to technology, there are tons of way to make yourself accountable while following the Trim Healthy Mama Plan. If you are just starting out with the plan, be sure to read the THM book. You can also check out how I lost 60 lbs postpartum following THM if you need some motivation to get started.

Finding accountability methods for success on THM that work for you is key to making the plan work. Does one of these ideas make you cringe? Don’t do it! Find one that you are comfortable with and get active into making yourself accountable to gaining a healthier life and body.

Trim Healthy Mama Facebook Groups

The THM Facebook Groups are amazing for so many reasons. They are a wealth of knowledge and typically a big community of supportive THM mamas, THM bloggers and admins/coaches. 

You can find accountability for yourself here in a number of ways. Many times people will suggest 7 day or 30 day challenges. Sometimes they are food based or workout based. Maybe a fuel pull 4 day challenge or a 30 day no cheat/off plan challenge. This is a great way to get in with a smaller group of women and stay on track. 

In the THM Beginners group, there is an awesome lady that posts every day encouraging more seasoned THMers to post their breakfast, lunch and dinner photos and then explain which fuel the meal is and why. I always think that being the teacher is a great way to learn and to be accountable. So get to teaching! Don’t worry, if you are not sure post anyway and someone will help you out. 

If you are looking for other groups, just type THM & then the specialty that you are looking for in the Facebook Search box. For example, THM Drive Thru Sues, THM No Special Ingredients, Working outside the home THM – there is a group for all of these! Plus tons more. Find one that fits you and that you can engage with regularly. 

Instagram THM Personal Food Diary 

Using Instagram for a food diary is a great way to create accountability for yourself, track your progress and even get meal ideas from other mamas. 

I created an Instagram account just for my THM stuff and my food diary. You can check it out by clicking here to get an idea of what I mean by food diary and to get lots of E and S meal ideas plus see what I eat every day. 

There are lots of THM food diaries on Insta that you can follow for inspiration. 

Food Log For Accountability 

If you read my post on weight loss stalls on THM, you know that I recommend a food log if you aren’t losing. It isn’t right for everyone and some people start THM just so they don’t have to track their meals and record calories. So if it isn’t your thing, just keep on keeping on. 

But if you enjoy seeing a record of your meals and progress, a food log could help you with accountability. I like to use the My Fitness Pal app to record meals.

THM Buddy 

Having a Trim Healthy Mama buddy can be a great way to keep yourself on plan. Maybe it is a friend at work, your sister, mom or even a Trim Healthy Husband. The method that you use to keep in touch and the frequency is up to you. Text pictures of your meals, meet up for a THM friendly lunch or call when you are on the verge of going off plan to get some encouragement. 

You can even get on one of the THM Facebook pages and ask for a buddy if you don’t know someone personally. I have seen it done plenty of times & you might even help someone else find their buddy too! 

I hope these accountability methods for success on THM help you to find a way to stay engaged and encouraged on your journey. Grocery Budgeting on Trim Healthy Mama - Part of the THM A to Z Series

Today is Day 2 of our THM A to Z series and we are on letter B which is all about budgeting on Trim Healthy Mama. If you want to see the entire THM A to Z guide, just click here!

There is no doubt that you can let your spending get out of control when following the THM plan. But the good news is that you don’t have to spend a ton to follow the plan! With a little bit of planning, you can stay within your grocery budget and still move towards your goals of losing weight and getting healthier.

The first time that I started THM, I quit after a few weeks. One reason that I attribute to quitting was that I was making the plan to complicated. I’m typically one of those “all in” kind of people. On the THM Facebook pages, people often recommend starting with one meal and building from there. That isn’t me. I bought every special ingredient, I ate every meal perfectly to plan. 

And in doing so, I was making things so hard. So expensive. And so after a few weeks, I burned out and quit. Thankfully, I had learned the basics and picked it up a year or so later after my 2nd baby and successfully lost 60 lbs.

Budgeting On Trim Healthy Mama

Here are some easy tips to help you keep your grocery budget low while budgeting on Trim Healthy Mama. 

Don’t Buy Special Ingredients

I know when you look online and see those yummy looking THM cupcakes with on plan icing, it can be tempting to run out and buy two different kinds of sweeteners, a nut flour, a baking blend, and a bunch of extracts. But those costs really add up quickly. And you may or may not even like that multi-ingredient treat. 

If you hang around here, you will see quickly that I very rarely use special ingredients on THM. I don’t use them for a few reasons but mostly because they are A. expensive and B. they complicate my life.

Try buying whole foods and avoid using those special ingredients to save tons at the store. I promise you can do THM & be happy without all those special items. 

In Season Produce

This tip is true for any way of eating but it is worth mentioning if you are budgeting on Trim Healthy Mama. 

Buying in season produce can save lots of money. If you have an Aldi nearby, their weekly produce specials are often right around $1. You can make lots of meals or snacks very cheap buy purchasing fruits and vegetables this way. 

You can also check the frozen food area if you need or want something that is out of season. I can usually get frozen vegetables for .88 – $1 per bag. 

Shop On Sale

Check the weekly sale circular for THM approved items. More and more stores are focusing on offering healthy items in their weekly sales. Of course you will find sales on meat and produce but I have recently found things like Zevia Soda, Halo Top Ice Cream, Mission Low Carb Tortillas, pork rinds, Skinny Pop and more. 

If something is on sale one week that I know we like, I will buy some extra to keep in the pantry or to freeze. If i can save a couple of bucks an item by purchasing during a sale, that can really add up.

Cook Simple Meals

Meals with few ingredients will typically cost you less than those that require tons of ingredients. It also helps you cut down on your kitchen time (and saves some sanity). 

Here are a couple of ideas that keep the meal planning easy and the cost down while budgeting on Trim Healthy Mama.

E Meals:

Sprouted Bread Sandwich

Grilled Chicken, Sweet Potato and another veggie of choice

Tuna Salad Sandwich

Peach Baked Oatmeal

Turkey and bean Chili 

S Meals:

Parm Crusted Pork Chop, Cheesy Zucchini 

Cheeseburger Soup (I love soup because it stretches so far. You could serve with Cheese Quesadillas on Mission Low Carb Tortillas)

Spaghetti (Even if you use Dreamfields Pasta this is still a cheap meal that the whole family will like)

Breakfast For Dinner – Eggs and bacon or some kind of crustless quiche 

The thing about these meals is that you don’t have to buy a thickener like Xanthan Gum, nutritional yeast, or protein powders. You could easily make several more family meals for your family by purchasing proteins and vegetables/fruits vs. these specialty items. 

Consider Your Swapped Savings

You are giving up some of your old habits for new and healthier choices. So although this may not put money back in your pocket, lots of times it will at least be an even swap.

Here are some examples:

A bag of chips vs. A bag of Pork Rinds 

Regular soda vs. Zevia or Bai 

Sugary Cereal vs. Love grown Power O’s 

Admittedly some of these options might cost a bit more than the sugary/carby/fatty variety. But most of these items are optional so you don’t have to buy all of these on every grocery run! Spending an extra dollar on Love Grown Power O’s vs. a sugary cereal won’t likely kill your grocery budget.

The problem comes in if you are trying to buy all of these convenience items, all the THM special ingredients, all the specialty flours etc. Just pick one or two things to try a week and then stock up on veggies, fruits, meats, cheeses and healthy carbs.  

It is also important to try and modify some of your old less than desirable food habits. For example, my old 4 Diet Cokes a day habit is not one that I would want to continue. So as opposed to subbing in a Zevia or Bai for those 4, I might try to get it down to one or two a day. Eventually you would try to get it even lower. So now, I’m proud to say that I don’t Need Diet Coke anymore and only have a Bai Creamsicle or some other drink as a treat. 

This helps not only my health goals but also my grocery budget.

Adopt Meatless Monday

Ok, you can do this any night of the week but Monday makes the cutest phrase! I find this easiest to do with an E meal but it is possible with S meals as well. By eliminating meat, you get rid of what is typically the most expensive portion of a meal.

Here are a couple ideas for eliminating meat that your family will be ok with! For an E meal, we love to do black bean tacos or veggie dinner. For veggie dinner in an E, you can bulk up the meal with a carb like a baked sweet potato, brown rice or lentils.

For an S meal that is meatless, you could do breakfast for dinner and have a veggie omelet. Another favorite of ours is mac n cheese zoodles (though I am guilty of topping this with bacon on occassion)!

Keto Baked Chicken and Cauliflower Rice for One

Cooking for one can be a challenge regardless of the way that you eat. Add in a special diet like keto or low carb and it can feel very difficult. 

Now I don’t really have a small family – husband, 2 young kids and 3 stepdaughters that are teens/young adults. So cooking for one is not something I deal with on a daily basis. However, I am the only one that consistently eats low carb (THM S) meals in my household. 

But there are some occasions where I need to cook just for myself. Cooking for one can be done! And you might even like it. When you cook for one, you get to cook exactly what you want without taking into account others wants and needs. 

That might sound selfish but when you are used to trying to please up to 6 other people, it seems like a relief to only have to make myself happy. And since I am the only one that likes cauliflower rice in this house, Keto baked chicken and cauliflower rice for one is a dish that is enjoyed just by me.

Keto Baked Chicken and Cauliflower Rice for One

My kids and my husband have been out of town leaving me to hang out alone at home for probably the first time in about 5-6 years. I’ve watched a lot of tv, taken some long bubble baths and even been a tiny bit productive.

While I can’t say that my food choices were admirable or anywhere close to Keto/Trim Healthy mama the first couple of days, by today I was ready to shape up. 

I was craving some good for me vegetables and comfort food all in the same pan. And since I was cooking for one, I wanted easy. So off to the grocery for my favorite kitchen hack. A beautiful warm rotisserie chicken. Ya’ll these things are dinner savers! Cheap and half your dinner cooking is done.

After debating something Mexican (my go to), I decided a take on traditional chicken and rice sounded good. 

This Keto baked chicken and cauliflower rice for one is creamy, cheesy and delicious. It also comes together in less than 30 minutes! Less than 30 minute meals are really key for me to stay on track. Many of my favorite keto meals are quick and incredibly easy.

Salsa Verde Queso Chicken, Smoked Salmon Cucumber Roll ups, and Mac and Cheese Zoodles are all simple and easily portioned for a one person keto plate. 

Instructions 

To make keto baked chicken and cauliflower rice for one start by preheating the oven to 350 degrees and getting your glass pan ready. I use this perfect “just for one” sized casserole dish. If you are cooking for one and don’t own one of these pans, change that. They are also super cheap and come with a lid just in case you had leftovers. 

Next, you will combine the frozen cauliflower rice, olive oil, salt/pepper, sour cream, chicken broth and Laughing Cow Cheese triangles. Mix it all together. The LCC will not equally distribute at this point. Just roughly chop it with your spoon a couple of times.

Bake the rice for 10 minutes. While it is baking, cut your rotisserie chicken up and separate the chicken breast needed for this keto baked chicken and cauliflower rice for one. Slice the chicken breast into one inch pieces.

Once 10 minutes is up, stir the rice to distribute the melted Laughing Cow Cheese and return it back to the oven for an additional 10 minutes. 

Remove the pan from the oven and drain any remaining liquid from the cauliflower rice. 

Add the sliced chicken breast to the top of the cauliflower rice mixture. Top with the shredded cheese and bake for 5 minutes or until the cheese is melted.

Ingredients
  • 6 oz cauliflower rice
  • 1 Rotisserie Chicken Breast (fully cooked)
  • 2 tsp olive oil
  • 2 tbsp Sour Cream
  • 2 Triangles Laughing Cow Cheese
  • 2 tbsp Chicken Broth
  • 1/4 - 1/2 cup shredded cheese
  • salt/pepper To Taste
Servings
Ingredients
  • 6 oz cauliflower rice
  • 1 Rotisserie Chicken Breast (fully cooked)
  • 2 tsp olive oil
  • 2 tbsp Sour Cream
  • 2 Triangles Laughing Cow Cheese
  • 2 tbsp Chicken Broth
  • 1/4 - 1/2 cup shredded cheese
  • salt/pepper To Taste
Instructions
  1. Preheat oven to 350 degrees
  2. Combine frozen cauliflower rice, olive oil, sour cream, chicken broth, Laughing Cow cheese and salt and pepper in a small 3 cup glass baking dish.
  3. Bake for 10 minutes.
  4. Take the dish out and stir the rice. The Laughing Cow Cheese should be melted enough to spread evenly throughout the rice.
  5. Return to the oven and bake for another 10 minutes.
  6. Remove the pan from the oven and carefully drain any remaining liquid. Most of the liquid will be absorbed at this point.
  7. Slice the rotisserie chicken breast and add it on top of the cauiflower rice mixture.
  8. Top with cheese.
  9. Return to the oven for 5 minutes or until cheese is melted.

A bag or two of riced cauliflower is always living in the bottom of my freezer. It is kind of a Keto/low carb rite of passage. It is the Kale of 2015.

The trend is to eat cauli rice so of course, I buy it and put it in my freezer. But what do you actually do with it? Because I can promise you I am not just popping it in the microwave and putting it on a plate. No Ma’am, too plain and blah for me. Why Eat Cauliflower Rice?

Want to know a secret? When I first started eating low carb, I didn’t like cauliflower rice. Not just didn’t like it, I despised it. The smell of cooked cauliflower does not please me but I wanted to eat it. Remember that 2018/2019 cauliflower bandwagon that I wanted to hop on?

But why should we eat cauliflower? There are lots of reasons and here are a few of my favorites.

High Nutritional Value

Cauliflower is rich in vitamins and high in fiber. It is also very low in calories so it allows you to bulk up your meal without adding lots of excess calories. The cool thing about keto is that you don’t need to count calories but you also don’t want to go crazy with your calories either.

Budget Friendly

Cauliflower is also relatively inexpensive, even when buying it as a convenience item (like riced in the frozen food section). Since it is economical, you can use it to add volume to your meal and have plenty of money in your grocery budget left for more expensive items like meats and cheese.

Great Substitute for High Carb Items

Lets be honest. Many of us want to eat the same way that we did before making the choice to move to a healthier and lower carb lifestyle. Rice and potatoes and bread are all comfort foods that we grew up with. Being able to find a substitute to give you the feeling of a comfort food dish without all the unnecessary carbs and calories is a win.

10 Keto Recipes Using Cauliflower Rice

As I said up top, I didn’t always love cauli rice. You know why? Because it is not good plain. I am sure someone out there will disagree with me but to me it needs to be doctored up a bit (or a lot).

Trim Healthy Mama can seem daunting and expensive but it doesn’t have to be that way! Here is the Kroger ad & coupons for THM products for the week of 3/13-3/19.

The easiest way to get the coupons is searching for the item listed or scrolling on the Kroger app. All coupons listed are digital coupons. If the item has a “5x event” next to it, that means you can buy up to 5 and use the coupon on each item. So if it is an item you use often, stock up!

The Fuel source is also listed under each item to make it easier for you to plan your meals or grasp the plan! I have lost 60 lbs on THM.
