This week had a lot of really good and one that I didn’t love as much (but I know others go crazy for).

Cry No More Brownies Pg. 314
Overall Impression:
When I pulled these out of the oven, my husband said I don’t think I’ll like those. And to be completely honest, I had been thinking that in my head the entire time I was making them (especially during that whole blending of the okra part).
Thankfully he didn’t see the green stuff or I don’t think he would give them a shot at all.
But I am kinda crying that I’ve never made these before! I really wanted something sweet so I did not even wait for them to cool (which made for an ugly picture but this is real life here guys).
They were good! Like actually good. Not “okra brownie” good but just chocolate greatness on a plate.
Let’s be clear. These don’t taste like a real brownie to me. A little less milk chocolatey and not chewy. But it satisfied my sweet tooth and I was happy about that.
Relatively easy to make (even though I had to get out the blender)!
Make Again?
Yes! I will make okra brownies again (who am I)

Tips/Tricks:
Serve with Reddi Whip Dollop or even better some Vanilla Halo Top.
The top of mine kind of looked like the sweetener had settled on top. I’m not sure why. Maybe the fact that I’m using some 2 year old Gentle Sweet? Seriously though, anyone know?

I omitted the Stevia extract and nuts but otherwise followed the directions.

Overall Impression:
Unfortunately I was not impressed with this one. And I am so disappointed because it seems like so many love it.
I loved that the ingredients were simple and all things that I had on hand.
It was just something about the coconut oil that was overpowering. It was not a coconut flavor, just very oily to me.
Also, my sweetener was grainy and almost had a crunch to the chocolate. Again, could be my 2 year old sweetener? Not sure where I went wrong there.
Make Again?
I don’t think so. Maybe to dip something in, strawberries might be good.

Cowboy Grub Pg. 59
Overall Impression:
It was good. It gets rave reviews on the FB THM pages. I’m not sure I would rave but it was a good supper.
I think that I would have thought it was really good with a nice big sprinkling of cheese. The whole time I was eating it, I wanted cheese.
So the next time, I think I might try melting a couple of Light Laughing Cow cheese wedges in to give it some creamy, cheesy flavor.

Tips/Tricks:
I cook my rice and ground beef ahead of time and freeze. So when it was time to assemble the cowboy grub, it was a dump and go recipe.
I omitted the bell pepper in the hash and then used the grub to make stuffed bell peppers! It was a fun way to serve up the Cowboy Grub.

Overall Impression:
Good. It kind of reminded me of Egg Roll in A Bowl just not quite as many Asian flavors.

I subbed some leftover sausage for the chicken which made it an S instead of a FP. The sausage also made it a bit salty but if using the chicken that the recipe calls for, I don’t think you would have this issue.
Waldorf Salad Pg. 190
Overall Impression:
I really enjoyed this.
The plan was to have it for lunch but I ended up using it as a light dinner when my husband was out of town.
The flavors and crunch go great together and left me feeling satisfied.
